.....is the new endeavor of the Weston family as they pursue their passion for food and beverage hospitality in a different mode than they have in the past. This new retail venue will offer a variety of quality wines, craft beers, accessories, and gourmet food in a convenient and quick format, as well as catering packages for events and occasions both large and small. Many diners in the Treasure Valley have fond memories of Pacific Rim Restaurant, located in the historic Hyde Park district of Boise's North-End neighborhood during the 1990's. Many more have never heard of us! Admittedly, it was a bit of a “niche” restaurant, opening before Hyde Park became the trendy cycling and pedestrian mecca of eclectic shops and restaurants that it is today. However, having forgone restaurant ownership for over 14 years to allow for family time and raising two sons, it is gratifying (and amazing) that so many from around the valley remember us in such a positive way. We plan to offer the level of quality, value, and service that served us so well during our years as restaurant operators.
JANET WESTON, having spent her entire career of over 35 years in the food/beverage industry, is the creative “muse” of the Wine Stop. Although very accomplished in the kitchen, her forté leans toward the beverage aspect of the operation. She has created notable wine/beer lists for numerous fine-dining establishments, including the private Rock Creek Cattle Company in Montana, 43° North in Meridian, Barbacoa of Boise, and the exclusive Arid Club, also of Boise. Her talent for discovering delightfully unfamiliar yet delicious wines and craft beers is hard to match. She is currently the director of Food and Beverage at the Roaring Springs/Wahooz/Pinz family entertainment complex in Meridian; a role she will continue to fill as she oversees the product selection and operations at Pacific Rim Wine Stop.
ROBERT WESTON has spent over 40 years in the foodservice business. His background includes managing numerous kitchens, including the Blue Note Café (Boise), Bittercreek Alehouse (Boise), and Bardenay Restaurant & Distillery (Eagle). Most recently he has been a consulting chef for menu development at Wahooz/Pinz in Meridian, after a 2 year stint as sauté/appetizer/seafood chef at Chandler's Steakhouse in Boise. His role at the Wine Stop will include menu and recipe development, marketing, catering coordination and oversight of the details of daily operation.
SEAN WESTON, as the youngest son of the family, has been immersed in restaurant culture since the age of 4. Fast-forward 20 years, and the result is an extremely talented “Chef de Cuisine” for Pacific Rim Wine Stop. During the past several years, Sean has had the opportunity to work with several notable chefs in the area, at 43° North (Meridian), the Tavern at Bown Crossing (Boise), Muse Bistro (Meridian), and most recently at Le Café de Paris (Boise). He has developed a talented eye for nuanced plate presentation, and has a natural palate instinct for creating exciting combinations of flavor and texture. His impact on the standing menu, as well as daily specials, will be....impressive.
CHRIS WESTON (oldest son), KEN PRETTYMAN (brother), and ZACH PRETTYMAN (nephew), fill critical (but mostly invisible) roles involving website set-up & maintenance, graphics, IT support, landscaping, painting, repair & remodel projects, etc.
